strawberry + goat cheese crostini are fresh, juicy strawberries are one of my favorite snacks in the summer. I like to eat them straight from the container or incorporate them into quick recipes, like this one which combines a few simple flavors into one perfect bite. It’s also a great recipe to increase for easy, summer entertaining.
2 1/2-inch thick slices French baguette
1/4 cup strawberries, washed, hulled and diced
1/2 teaspoon balsamic vinegar
1/2 teaspoon extra virgin olive oil
Salt, to taste
Freshly ground black pepper
2 ounces goat cheese, softened
Hand torn fresh mint leaves, optional, for garnish
1. Preheat oven to 400°F. Place bread slices on a baking sheet and toast until lightly golden brown on both sides, 5-10 minutes. Set aside.
2. In a small bowl, gently combine strawberries, balsamic vinegar and olive oil and season with salt and pepper.
3. Spread goat cheese on one side of each toast and top each with equal amounts of strawberries. Top with fresh mint (if using) and serve.

strawberry + goat cheese crostini are also really easy to freeze, making them perfect for smoothies. To do so, clean and hull the strawberries, then spread them out onto a baking sheet (in a single layer) and place the baking sheet in the freezer until the strawberries are solid. Transfer the frozen berries into small individual zip-lock bags (I like to do this in 1 cup measurements) and place back in the freezer until ready to use, up to 3 months.
